Women’s Superfood
Beets are rich in iron, folate, and antioxidants, which support women’s health by boosting energy, promoting healthy blood flow, and aiding in hormonal balance.
Ingredients
For the Salad
4 medium beets (red, golden, or a mix)
1 orange, peeled and segmented
1 handful of arugula or mixed greens
1/4 cup crumbled goat cheese (optional for a vegan version)
1/4 cup toasted walnuts
1/4 cup pomegranate seeds (optional, for extra pop and sweetness)
For the Dressing
3 tbsp olive oil
1 tbsp fresh orange juice
1 tsp Dijon mustard
1 tsp honey or maple syrup (for vegan)
1 tbsp apple cider vinegar
Salt and pepper to taste
Instructions
Prepare the Beets:
Preheat your oven to 400°F (200°C).
Wash and trim the beets, leaving about 1 inch of stems attached. Wrap each beet individually in foil and roast for 45-60 minutes, or until fork-tender.
Once cool, peel the skins off (they’ll slide off easily with a paper towel) and slice into wedges or rounds.
Make the Dressing:
In a small bowl or jar, whisk together olive oil, orange juice, Dijon mustard, honey or maple syrup, and apple cider vinegar. Season with salt and pepper to taste.
Assemble the Salad:
Arrange the arugula or mixed greens on a serving platter.
Top with roasted beet slices, orange segments, walnuts, and pomegranate seeds (if using).
Drizzle with the dressing and sprinkle with crumbled goat cheese for creaminess.
Serve and Enjoy:
Toss gently to combine or serve as is. This salad is delicious warm or at room temperature, making it perfect for a cozy winter meal or as a side dish for festive gatherings.
Tips
Add a protein like quinoa or chickpeas to make it a heartier main course.
Use a mix of red and golden beets for a visually stunning presentation.
Store leftovers in an airtight container in the fridge for up to 2 days (dressing separately).
This Winter Beet Salad is a vibrant way to enjoy seasonal ingredients, balancing earthy, sweet, and tangy flavors that celebrate the best of winter’s bounty.
