Mashed potatoes with mushrooms and brussels sprouts

This creamy mashed potato dish is elevated with earthy mushrooms and caramelized Brussels sprouts, making it a comforting yet sophisticated dish.

Ingredients

Mashed Potatoes

  • 2 pounds Yukon Gold or Russet potatoes, peeled and chopped

  • 4 tablespoons butter (or vegan butter)

  • ½ cup whole milk or plant-based milk

  • 2 cloves garlic, minced

  • Salt and freshly ground black pepper to taste

Topping

  • 2 tablespoons olive oil or butter

  • 1 cup Brussels sprouts, trimmed and halved

  • 1½ cups cremini or button mushrooms, sliced

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon fresh thyme or rosemary (optional)

  • 1 tablespoon balsamic vinegar (for a hint of sweetness, optional)


Instructions

  1. Cook the Potatoes

    • Place the chopped potatoes in a large pot of salted water. Bring to a boil and cook for 15-20 minutes, or until fork-tender.

    • Drain and return the potatoes to the pot.

  2. Mash the Potatoes

    • Add butter, milk, minced garlic, salt, and black pepper to the potatoes.

    • Mash until smooth and creamy. Adjust seasoning as needed. Cover and set aside.

  3. Sauté the Brussels Sprouts and Mushrooms

    • Heat olive oil or butter in a large skillet over medium heat.

    • Add the Brussels sprouts, cut side down, and cook for 3-4 minutes until golden brown.

    • Stir and add mushrooms, salt, pepper, and thyme. Cook for another 5-7 minutes until tender and slightly caramelized.

    • If using, drizzle with balsamic vinegar and toss to combine.

  4. Assemble & Serve

    • Spread the mashed potatoes onto a serving dish or individual plates.

    • Spoon the mushroom and Brussels sprouts mixture over the top.

    • Garnish with extra thyme or a drizzle of olive oil if desired.


Tips:

  • For extra richness, add a splash of heavy cream or coconut cream to the mashed potatoes.

  • If you prefer crispy Brussels sprouts, roast them at 400°F (200°C) for 20 minutes before adding to the dish.

  • Try adding a sprinkle of Parmesan or nutritional yeast for extra umami flavor.
