Pea + goat cheese crostini

A delightful appetizer perfect for any occasion, blending sweet peas, creamy goat cheese, and crisp baguette slices.

Ingredients

  • 1 baguette, sliced into ½-inch thick rounds

  • 1 cup fresh or frozen peas (thawed, if frozen)

  • 2 tablespoons olive oil (plus extra for drizzling)

  • 1 garlic clove

  • 4 ounces goat cheese, softened

  • 1 tablespoon fresh mint leaves, chopped (optional)

  • Salt and freshly ground black pepper to taste

  • Lemon zest, for garnish (optional)


 

Instructions

  1. Prepare the Baguette
    Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet. Drizzle with olive oil and bake for 8-10 minutes, or until golden and crisp. Remove and set aside.

  2. Make the Pea Mixture
    In a small saucepan, cook the peas in boiling water for 2-3 minutes until tender. Drain and transfer to a food processor.

  3. Blend the Peas
    Add the garlic clove, olive oil, salt, and pepper to the food processor. Pulse until the mixture is slightly chunky or smooth, depending on your preference. Stir in the chopped mint if desired.

  4. Assemble the Crostini
    Spread a layer of goat cheese onto each toasted baguette slice. Top with a spoonful of the pea mixture.

  5. Garnish
    Sprinkle with lemon zest for a refreshing touch and drizzle with a little olive oil. Add a pinch of salt and pepper to enhance the flavors.

  6. Serve
    Arrange on a platter and serve immediately. These crostini are best enjoyed fresh!
